What’s the best way to cook beef?

If your only way of preparing red meat is to stir-fry it, you’re missing out on a whole world of beefy enjoyment. “First, buy quality grain-fed beef from a reputable butcher,” advises Jason Pope, owner of Hog’s Breath Cafe Singapore and director of beef-importing company, James Nathan Trading. “Always work with a recipe that suits the type of meat,” he offers.

Jason recommends getting rib cuts for roasting as their fat makes them perfect for this cooking method. For stews, chuck and rump cuts are ideal as they’ve got good flavour but might taste tough if cooked in other ways. But try grilling for the optimum beef experience – get a slab like tenderloin or rib eye and on a gas stove, grill it three minutes each side for rare, five for medium rare, eight for medium and 12 if you like it well-done.
