You Need:
4 eye-round steaks
8 slices wholegrain bread
1 medium-size onion, thinly sliced
1 handful rocket leaves
1 medium-size cucumber, thinly sliced
1 tomato, sliced Dijon mustard
Olive oil
Salt and pepper
You Do: 1 Heat a non-stick frying pan over high heat. Cook steaks for two minutes on each side for medium-rare. Set aside. Drizzle pan lightly with olive oil, cook onion slices until softened. Bread can be toasted if you prefer.
2 Divide four slices of bread among serving plates, layer with rocket leaves, cucumber and tomato slices, then steak. Top with a dollop of Dijon mustard and onion slices, season lightly with salt and pepper. Cover with the remaining bread slices.
