What's a healthy condiment I can use?

Try mustard – yup, the bottled kind. It has virtually no calories and is your safest bet to big flavour. You can stir it into a homemade vinaigrette, where it would also act as an emulsifier, binding the vinegar to the fat molecules. Or you could try spreading it on one side of your pork chops, chicken or fish. Then sprinkle breadcrumbs and herbs on top before roasting. Mustard can also replace your mayo blobs in your next potato, tuna or chicken salad. Keep a bit of mayo, but make your favourite mustard the star.
