How do I not get bumped off an overbooked flight?

The best way to protect yourself is to buy early and to travel during off-peak periods. Airlines bump passengers off when a flight is overbooked. So planning and confirming your trips earlier will eliminate such chances. At the end of the day, the airlines or travel suppliers are running a business. So, those flights with especially low yields are usually the first to go, compared to those whose passengers book early or pay for full Economy or Business Class fares.

Easiest way to ensure you'll not get bumped off a flight is to order a special meal. You'll get your meal served to you right before everyone gets their tray, and it is harder for them to re-scheudule that kosher meal you ordered if they put you on another flight. So go ahead, order something vegan or kosher and enjoy the flight, but a word of caution. When this happened to me, my buddy travelling on the same flight got bumped off and I had to travel alone.
