How can I make a vegetarian meal that’s not a salad?

You can draw inspiration from cuisine across many countries to do this. Make corn wraps that contain beans and fresh vegetables topped with salsa like the Mexicans. Or make Indian-style soups and stews containing chickpeas and lentils.
For something exotic to the Asian palate, cook pasta or make pizza with eggplants, squash and olives. You can also top crusty bread with sweet chopped tomatoes to make a bruschetta.

For something closer to home, go Japanese with vegetable tempura and seaweed noodle, or return to the local Chinese roots with beancurd, which comes in many forms and can be prepared in a variety of ways..
